We are excited to be collaborating with Ivy Ronquillo, owner of Second Mouse Cheese Shop in Pleasantville, NY. Ivy studied at the French Culinary Institute, now International Culinary Center. Her love of cheese came as she became the right-hand woman to famed Proprietor-Chef Terrance Brennan, of Artisanal Bistro Picholine and the Artisanal Premium Cheese Center. She learned directly from the experts what makes cheese a fascinating topic, from its timeless history to its painstaking affinage processes.
She later joined the exceptional forces at Murray’s Cheese, in Greenwich Village, then rounded out her niche expertise at Greenwich Cheese Company in Greenwich, Connecticut. Ivy emphasizes quality over everything else.
Second Mouse Cheese honors its personal connections to cheese-makers and fine-food producers, supports local agriculture and defends sustainability. It celebrates the foods borne of ancient traditions and encourages sharing the nourishing creations where love and soul are active ingredients.
